My bad wasn’t …
My bad wasn’t watching close enough, just uming, he’s just using octaves. Not trying to make you sound musically illiterate but when you’re lookin at those chords or playin a groove, try to stay away from the thirds, so if the chord says C7, just play the C and it’s 7th interval. You can use the blues scale in your left hand also (duh) but to keep it simple while soloing just play around with the sevenths and octaves, with chromatic passing notes. What I would do anyways : \

With your left hand …
With your left hand just do the m7 interval, ex: Bb to Ab, or C to Bb. The rest of the notes are just chromatic passing to the next key. So he’s starting on C, hitting the 7th (Bb) then walking the C chromatically up to Eb, then hitting Eb’s 7 (Db) Ya dig?
